My Story
When I met my husband, he would eat the same meal everyday: yogurt, blueberries, granola and said it was the perfect meal: proteins, fibers, fruit, good fat... It was then such a challenge to make the perfect granola and finally, here is the recipe. You can eat it with Fage yogurt and your favorite fresh cut or frozen fruits for breakfast, brunch, or dinner if you also think that this meets the requirements of a normal meal!
Recipe
Preparation Time: 5 minutes
Cooking time: 40 minutes
List of ingredients
3 cups rolled oats
1 cup unsweetened coconut chips / flakes
½ cup shelled pistachios (raw, unsalted)
½ cup pumpkin seeds
½ cup sunflower seeds
½ cup pecans
1 teaspoon salt
1 tablespoon vanilla
1/3 cup light brown sugar (or a little less)
1/3 cup maple syrup
1/3 cup extra virgin olive oil (or mix olive oil and coconut oil)
Method
Mix all the ingredients together in a large bowl
Bake on a parchment paper at 300 degree until lightly golden, for approximately 40 minutes, stirring every 10 minutes
Store in a glass Tupperware
Serve with Greek yogurt and fruits
Optional: can add dried cherry after cooking!
