Piñata Rice Omelette

Submitted by Joan U, Lead Research Finance Analyst, Division of Pulmonology, UCSF Health

My Story

Due to Shelter-in-place, my family needs to be more creative to make different type of dishes for our boys. They love this dish because the color is bright, lot of favor and the most important part is the omelet. When they cut open the omelet, the egg and milk “melt” with the fried rice. The dish comes from Japan. We usually prepare this dish with our boys together. They are looking forward to cutting the omelette open and see how the egg and juice fall to the fried rice. We love making this dish as this is our family bonding time.

Recipe

Total Preparation Time: 15 mins

Total Cooking Time: 15 mins

Ingredients

1 tablespoon Cooking oil

2 Sausage (chopped)

½ cup Onion (chopped)

1 tablespoon Ketchup

¼ teaspoons Salt

2 cups Rice

¼ teaspoons Pepper

2 eggs Egg

1 tablespoon Milk

2 tablespoons Corn

Method

  1. Heat the cooking oil in a frying pan to cook the sausage and onion

  2. Add rice to mix gently

  3. Add salt, pepper, and ketchup for favor

  4. Place a large piece of plastic wrap around the lid in a bowl

  5. Add 1 tablespoon of milk to the beaten egg for 2 eggs and mix

  6. Add 2 tablespoon of corn

  7. Twist the end of the wrap lightly and tie it with a thread

  8. Put it in boiling water and cook the whole while constantly moving (about 4 mins)

  9. When the egg liquid comes off the wrap, the omelet is ready

  10. Pack the fried rice from the pan in the bowl, return it to a flat plate and put omelette from on it.

  11. Add ketchup to your preference and complete

Tips

  • You may use chicken breast (chopped) or any type of meat or ingredient you prefer.

  • You may also red/green pepper and carrot in the omelet.

  • Make sure to keep stirring the omelet in the boiling water.
