My Story
My grandma used to make this every year (sometimes more often) for Rosh Hashanah.
Recipe
Ingredients
5 large eggs, at room temp
1 cup granulated sugar
1 cup all-purpose flour
2 lb (4 med/large) Granny Smith apples
Powdered sugar to dust the finished cake (if desired)
Equipment
9″ springform pan, generously buttered or covered with wax paper
Method
1. Preheat oven to 350F, Peel and core apples, cut into cubes.
2. Using electric stand mixer, beat 5 eggs with 1 cup sugar on high speed for 5-7 min until thick and fluffy.
3. Add 1 cup of flour slowly until combined.
4. Fold in the cubed apples and transfer batter to the prepared baking pan.
5. Bake for 1 hour. The top will be golden brown.
6. Remove from the oven and let cool in the pan for 15 min then you can slide a knife around the sides of the cake to loosen it from the pan.
7. Once cake is near room temp, dust with powdered sugar (if desired) and serve.
