My Story
Daw-See Gai Fan (Black Bean Sauce Chicken Over Rice) is and always will be my favorite Chinese dish. As a kid, any time my mom would make anything with daw-see (black bean) I would pick them off the dish just to smoother it over my rice -- it is perfect over white rice! When I would visit my family from college, my aunt always made enough daw-see gai for me to pack and take with me to Irvine. I would freeze at least two servings, and take it out to eat it whenever I needed a “home-cooked” meal.
The recipe is easy, quick, and does not require much prep. Ingredients can be substituted, or added based on your taste preference. Once I had asparagus and corn in my fridge, and decided to throw it in the stir-fry. Because...why not? Once you have the sauce down, you will see that your opportunities are limitless.

Serves 4-5
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients
● 4 chicken thighs, cubed
● ½ cup black beans
● 2 green pepper, chopped in large pieces
● ½ onion, chopped in large pieces
● 4 cloves garlic, minced
● 1 jalapeno, minced (optional)
● 1 green onion (optional)
● Seasoning (salt, pepper, garlic powder - anything you have in your kitchen)
● White rice
For the chicken marinade
● 1 tablespoon salt
● 1 tablespoon pepper
● 1 tablespoon soy sauce
● 1 tablespoon white wine vinegar
● 1/2 tablespoons cornstarch
For the sauce
● ¼ cup oyster sauce
● 2 tablespoons soy sauce
● 3 tablespoons sugar
● 1 teaspoon white wine vinegar
● 2 cups cold water
● 2 tablespoons cornstarch
Directions
Prep the chicken: cut your chicken thigh into small cubes and place it into a bowl and leave it on the side for about 15 minutes. In the bowl, add and mix together the ingredients for the chicken marinade.
Soak the black bean: Black beans are very salty. I like to put 1/2 cup of black bean in a bowl and soak it in cold water. Leave this on the side while you continue to work on the other ingredients.
Cut your veggies: Chop your green pepper and onions into cubes, a similar size as your chicken. You want nice chunky pieces that you can eat with your chicken. The jalapeno and garlic can be finely chopped/minced so that it adds to your flavor profile.
Rice: Now is a good time to start your rice! Your food will be done in about 20 minutes.
Cook chicken and veggies: I like to use a wok but if you don’t have one, any skillet is okay. Put some oil in your skillet and cook your chicken first. Try your best not to stir or flip the chicken until about 5 minutes! Once you have flipped your chicken, wait two minutes then add your veggies.
Make the sauce: While your chicken and veggies are cooking, you can start on your sauce. In a bowl add and mix together all sauce ingredients.
Add: When your chicken and veggies are fully cooked, pour your sauce into the bowl. Stir and let the sauce heat up and thicken for about 3-5 minutes.
Serve over rice, and enjoy!
