Grandma Yetta’s Chocolate Peanut Butter Squares

Submitted by Allison Webber, MD, Division of Nephrology, UCSF Health

My Story

This was an original dish by my grandmother Yetta. She was a fantastic baker and this was a family favorite. She lived in Cleveland (and I grew up in New Jersey) so we would often get them sent to us in carefully wrapped packages. When I was at sleep-away camp, she would always send enough for the entire bunk...and I became extremely popular. -Enjoy!

Recipe

1 stick butter or margarine (1/2 cup)

½ cup peanut butter

½ cup white sugar

½ cup brown sugar

1 egg

2 tablespoons water

1¼ cups flour

¾ teaspoon baking soda

½ teaspoon baking powder

¼ teaspoon salt

12 oz package chocolate chips

½ cup chopped salted peanuts (I use honey roasted)

Preheat oven to 375. Grease pan, roughly 13x9x2

Mix margarine, peanut butter, sugars and egg. Stir in water, flour, soda and baking powder, salt and ½ of the chips.

Spread in pan. Bake about 20 minutes. Remove from oven and immediately sprinkle remaining chips evenly. Place baking sheet over pan to contain heat so chips melt. Spread softened chocolate evenly and sprinkle with peanuts. Cut into bars, about 3”x1”. This makes about 32 cookies.
